Start by boiling the potatoes until they are soft and easy to mash.

Once boiled, peel the potatoes and mash them thoroughly in a mixing bowl.

To the mashed potatoes, add a squeeze of lemon juice, black salt for seasoning, garlic paste, ginger paste, a hint of sugar, and onion paste. Mix everything well to ensure even distribution of flavors.

Take a portion of the potato mixture and shape it into round patties or oval shapes. You can flatten them slightly for even cooking.

Heat oil in a deep pan or kadhai. Once the oil is hot, carefully slide in the shaped vadas and fry them until they turn golden brown and crispy on the outside.

Once fried, remove the vadas from the oil and place them on absorbent paper to drain excess oil.

You can also add finely chopped green chilies or cilantro for an extra kick of flavor.
