An evening at ‘The Saudi Table’: Where culinary traditions bridged cultures

Until recently, I hadn’t fully appreciated the deep cultural ties that quietly link the Arabian Peninsula and the Indian subcontinent. Beyond centuries of maritime trade and the exchange of spices, there exists a shared ethos rooted in warmth and hospitality. That connection came alive for me at a special culinary residency hosted by the Saudi Tourism Authority, titled The Saudi Table.

A Thoughtfully Designed Culinary Journey

The experience was curated by renowned chef Kunal Kapur, whose reputation for blending global influences with Indian sensibilities made him an ideal choice for the event. Rather than presenting a straightforward meal, he crafted an immersive exploration of Saudi Arabia’s evolving food traditions, tailored thoughtfully to Indian tastes.

The evening began with expansive grazing tables that immediately set a communal tone. Among the highlights were fragrant za’atar grown in the Gulf, sharp pomegranate molasses, premium dates from Madinah, and saffron-laced mezze. Small plates followed — grilled halloumi, delicately spiced lamb koftas, and seafood prepared in Gulf style — each offering a glimpse into regional flavours.

The centrepieces of the evening were the larger ceremonial dishes. Classic preparations such as Kabsa and Mansaf embodied the spirit of shared dining, bringing guests together around hearty, aromatic platters. Dessert provided a fragrant finale: warm kunafa and a rose-and-pistachio panna cotta that balanced richness with subtle floral notes.

A Conversation Beyond the Kitchen

While the food was memorable, the opportunity to engage personally with Chef Kapur added a meaningful dimension to the evening. Despite his international acclaim, he came across as approachable and gracious. He generously shared insights into his creative process — explaining how he sought to honour Saudi culinary traditions while ensuring the flavours resonated with an Indian audience.

Spending time discussing his inspirations and philosophy transformed the event from a tasting session into a cultural dialogue. It offered a behind-the-scenes look at the thought and research that went into crafting the menu.

More than anything, the residency reflected the relaxed and generous spirit associated with Saudi dining customs. The evening unfolded at an unhurried pace, encouraging conversation and connection. Guests were not merely sampling dishes; they were engaging with a broader narrative about Saudi Arabia as a destination rich in history, culture and evolving experiences.
